Traditional dry farmed viticulture. Practicing organic gobelet (vaso) trained vines. Cultivated completely by hand, with minimal human intervention. The majority of the vines receive no treatments whatsoever. Many of the vineyards are planted directly into the rock (slate). Drastic diurnal temperature shifts due to the altitude (850m) produce wines with great acidity. Honey, candied fruits, white flowers, and distinct minerality. Opulent mouth feel balanced out by bright acidity. 201 g R.S. 4.5 kg of grapes required to make 375 ml of wine.
