The Xarel-lo grapes for this cava are picked from plots in the mountainous Garraf Massif and are barrel aged separate from the other 2 varieties. Once bottled the cava ages for a minimum of 15 months.
There is a lovely nutty, butteriness to this cava which is full of delicate white fruit and crisp apple acidity. The salinity of the xarel-lo really comes through in the mouth and is balanced by the vanilla and pastry notes.
