Controlled fermentation at 27 °C. It is aged for a minimum of 12 months in 225-litre barrels, 80% of which are French oak and 20% American oak. Ruby colour with violet tinges at the rims. Very intense colour. Aroma of not very ripe berries (blueberries).Toasted notes from the barrel, toffee, vanilla. Sweet sensation: cocoa, liqueur bonbon. In the background, black pepper and floral notes (violet). It is a tannic, round, full-bodied wine. Balanced. Sweet fruity sensation. Long aftertaste. Predominant hints of toast from the barrel. Pairs with meat, fish & medium-aged cheese.
