Description
Highly selected excellent vineyards that are more tan 40 years old and produce low yields. Grapes are harvested manually in 15 kg boxes that are later inspected at the sorting table. Gravity systems, temperature-controlled fermentation and several tastings a day, with a maceration period of about 21 days. It rests in the barrels for at least 18 months (70% French oak barrels and the remainder American), and at least half of the barrels are renovated each year.
