Sant Antoni, Scala Dei 2019

In crafting this wine, our goal was to revive Priorat's winemaking heritage, echoing Cellers de Scala Dei's inaugural bottling. Drawing inspiration from 1970s practices, Sant Antoni was meticulously created. Harvesting in early October involved delicate gathering in small boxes, followed by crushing without destemming before fermentation. The entire process occurred in a 3500L (925 US gal) cement tank, where spontaneous fermentation, without added yeast, mirrored historical temperature patterns. The pressed wine matured within the tank, capturing the essence of tradition.
